State of the art and market potential (WP1) will review the state of the art (SoTA) of Rest raw material (RRM) processing for food grade products. This includes defining the status of the industry, technologies and future trends of development, as well as availability and accessibility of RRMs and seaweeds. After the SoTA, an economic assessment of the market potential and barriers will be performed.

Economic assessment
The economic assessment of the market potential and barriers is based on SuMaFood solutions and will develop an estimation model tool for material processing and preservation – until it is available for the market. The tool will allow plant owners and stakeholders to estimate the required investment and operational costs, resulting in a market price for food-graded powders.
